When I first received these pans as a wedding present I LOVED them. They do sear food beautifully as promised. And they clean up pretty well, although you do have to hand wash them and use Bar Keeper's Friend to keep them looking nice, which is tedious. I just celebrated my 4 year wedding anniversary, and I am no longer impressed with these pans. They have not withstood the test of time as I had hoped. For starters, the 12" fry pan warped! I called customer service and I was told by Calphalon that this was caused by high heat settings and a burner smaller than the pan (I have a standard stove top, so my largest burner is definitely not 12" in diameter). I meticulously read and followed the care & use instructions when I received these pans and they conveniently did not mention this potential problem. My second gripe is that the surface dents and dings over time when you use metal utensils (which they say are ok to use...). At first this seemed like just a cosmetic problem for the pan, but the surface coating is starting to wear off now where the pan has been nicked (by my Calphalon metal utensils). There are metallic silver indents all over the inside of my pans now. As a result, I am getting more food sticking to my pans. So, I am not impressed. With very careful care, I think these pans would last and they do cook nicely. But really, there are so many precautions you must take while using them... it seems ridiculous given the price tag! There must be better products out there. I have friends that have Scanpan and they swear by them. Plus, they are environmentally friendly AND you can clean them in a dishwasher if you are in a pinch. I am going to try out those pans instead.

Does anyone think this is non stick or is it stainless steel with a color coating? I thought I was making a smart decision but I can not cook anything, stir fry, deep fry without food sticking to the bottom.
I would not recommend you waste your money on inferior product. Spend less and get non stick.

I love these pans. They sear and if heated properly and properly cleaned (bar keeps friend my friend) they are close to non-stick without the nasty chemicals.

This cookware set is a huge disappointment! I was so excited to have this fancy brand that had terrific reviews. I have now owned it for almost 2 years and am completely disappointed. Foods that wouldn't stick to stainless stick to this stuff! However, the biggest problem for me is that the surface of pot I used most often (several days a week) is deteriorating. I wasn't paying too much attention to it, but my husband pointed out that the surface is entirely gone in some areas. Yikes! That particular pot is now retired, and I am searching for a new stainless steel set to buy because I am concerned the rest of the set is on its way out too.

I bought this set a couple of days ago, and I am completely disappointed. Actually, I didn't buy the whole set since it contained a lot of pots and pans whose size deemed them unusable by any standard, so I picked out pots and pans that I imagined would be most necessary in daily use. I ended up buying three infused anodized pots/pans and the rest were non stick, all from Calphalon One line. I used two pots so far and followed all the instructions regarding preheating, cleaning, etc., yet I had the worst experience ever with any cookware. After cleaning the pot and drying it, I noticed some violet patches at the bottom of it that would not come off regardless of what I tried. I called the customer service, and they told me that this was a "normal reaction to heat" and that it would come off. It did not! I have not even tried out the other pans, but after this experience, my only plan for this cookware is to return it ASAP. Also, I wasn't able to sear or deglaze any of the meat, the cooking time was much longer than with other cookware that I have used, the pots didn't react fast enough to heat changes and the food didn't taste any different. What a disappointment!
