I have a full set of Calphalon knives and love them. One of the best added features is the type of knife is etched on the butt of the handle and it makes it easy to grab just the right one. But besides that convenience, these are solid knives made from German steel that have held an edge for years--use them constantly. The 7 inch Santoku was for my wife who makes many of the daily meals and while she loved the smooth action and balance of the knife, the length was too unwieldy for her smaller hand. We wound up exchanging it for the Calphalon 5 inch Santoku and it's a great fit for her.

This is by far, the best knife I've ever purchased. It's actually a shame to call it just a "knife" as it would be like calling filet mignon just a steak. It is a culinary cutting tool that is a neccessity for every kitchen. I wanted to try a Santoku-style knife and chose the Calphalon after factoring quality vs price. I'm glad I made this purchase. Food prep is fun again. The knife weighs 8 oz. and balances slightly aft of the point where the handle meets the bolster. The blade holds a good edge. The synthetic handle is comfortable and provides secure control even when wet. My traditional chef's knife is now crying from loneliness (although it will always have its honored place in the kitchen).

I am a knife snob about quality - and that means sharpness, ability to maintain sharpness, balance, edge, construction, ability to clean, etc. and I have all manner of knives from an inherited high carbon, bone handle, hand forged antique, to an ulu, to a series of Mac knives that used to be my favorite. I have actively disliked all of the big store brand name knives that I have ever used because looking at price (way to high) for quality as a kitchen tool (moderate at best) they are nothing to spend money on.



These Calaphon knives are wonderful. I will admit that I got them on sale, but even at Amazon prices they are exceptional price for value. If you want quality knives that you will use then buy these, if you want trendy, then just select the highest price.

Good value. I wanted to add a santoku to my Henckels 4 Star set, but the price for a Henckels 7" santoku was 3 times the price of this blade. Balance is good and grip is comfortable. Full tang through handle. Easy to put an edge on and holds it as well as any knife I own. When comparing it to the Henckels set, I believe no one other than a metallurgist could tell the difference.
