I've had this set (plus several Calphalon pans) for about 10-15 years. Of the ones that I haven't thrown out, I am selling the rest of them in a garage sale where I'll get pennies on the dollar.



If you cook with any oils or fats, the exterior cannot be cleaned. You can't be aggressive in cleaning or you'll take off the exterior coating (ask me how I know). You have to hide the cookware once the exterior becomes dirty -- it's embarrassing.



Initially, the non-stick surfaces really are a joy to cook with and so easy to clean. Before cooking, I use a little bit of olive oil and wipe the interior. The cooked food just slides off. I take a paper towel and clean the interior. If cookware needs to be washed then I use a nylon Dobie pad. So when you first buy this set, you'll initially be very happy with this cookware. However, even with the gentlest care, the non-stick surfaces degrade.



Nearly all the cookware that advertises itself as dishwasher safe has in the care and use instructions a caveat that doesn't recommend cleaning in a dishwasher. So the box and advertising scream out dishwasher safe but the paperwork buried in the box states the exact opposite. I have never put any non-stick cookware in a dishwasher.



One of the smaller pans is not weighted correctly (not in this set but of the identical type). The pan is too light for the handle. I can't believe an item that expensive could be engineered so poorly. I stopped using that pan years ago.



I spent over one thousand dollars on my Calphalon set which cost nearly hundred dollars/year. I replaced the Calphalon cookware with just several Le Creuset items (they are heavy cast-iron which might not be suitable for some people). See my reviews.



If you've recently purchased Calphalon nonstick cookware, you're rightfully probably very pleased with the performance and you'll disagree with my review. I wonder if you'll remember this review in a few years when you become disgusted with this cookware and shop for other pots and pans?



If you are intent on buying non-stick cookware, buy something much less expensive. That way you will not feel so guilty about throwing it away.

I was skeptical when the sales lady told me that I could cook a chicken breast with NO oil and that it would not stick. So the first thing I did was try it out. Amazing! This cookware came through on all it's promises. When I washed the pan, everything came off so easily. I know you can put these in the dishwasher, but I still think I will continue to hand-wash them. After using this Calphalon Unison set, I would be spoiled to use anything else.

I have owned the 10-piece Calphalon Unison set since October 2009. Frankly, I don't cook that much. I certainly don't use the pans every day; more like twice per week. Other than a soft silicone spatula, the ONLY utensils I have used are the Calphalon ones that came with the 10-piece set as a bonus and are meant to be used with the pans. I can say that the pans have significant scratches despite the use of proper utensils. They are very nice to cook with (love the searing pans) and I like the fact that they can be put into a dishwasher but really expected far better quality for the price. I wonder how much of the surface coming off ends up in my food.........and how soon I'll be looking for a new set. It won't be Calphalon.

We have had the Unison cookware set for almost a year now, and I can say that I would not buy Calphalon again. Even following the instructions (slow heat-up of cookware), and using appropriate non-stick utensils, the pans look like they are 3-5 years old already. Stains on the exterior do not come off, and the non-stick coating is gouged and shows plenty of minor surface scratching. I realized that this is aesthetic, but for the price, I'm very disappointed. My previous cookware was Circulon Professional from Costco, which performed well and showed little wear during 3 years of use, and for 1/2 the price of this set. I'm going to be contacting Calphalon with my disappointment in their supposedly amazing product, which after I've used it, I've decided trades on it's good (temporary) looks and style, and marketing ploy (versatility) over actual quality. I wish I'd taken my money and started a set of All-Clad.

 "Great, once you learn how to use it" 2010-10-05

If you're going from cheap cookware to this stuff, there is a little bit of a learning curve with this cookware. But if you read and follow all of the included directions, you should be just fine. A few words of advice for the newbie: meats will ALWAYS stick when you first start cooking them, but if you give it a few minutes, it WILL release itself (especially if you cook with a lid to retain moisture). Don't try to force it. Just be patient.



I would say that overall, this cookware cooks very nicely. I'm always amazed at how quickly these pans heat up. Even if I'm just washing the pans in hot water, they get hot fast!



Cleaning is usually pretty easy, but sometimes you need a little extra help. Sometimes the food leaves behind a weird residue on the pans, but this can be easily removed with Bar Keeper's Friend. You don't need to use it every time, but it helps to keep the pans looking nice and new. But sometimes, even scrubbing with Bar Keeper's Friend isn't enough to get the pans clean. I had some olive oil burnt on one of my pans, and it looked awful. I tried scrubbing with regular dish soap, scrubbing with Bar Keeper's Friend, soaking it for days on end. Nothing worked. Finally one day I decided to try something else. I boiled some water in the pan, poured it out, and scrubbed it with a ScotchBrite while the pan was still hot. Worked like a charm! It actually came off fairly easily.



If you follow all those directions, these pans are pretty easy to cook with and take care of. No dishwashers allowed, but that's what you get with ALL expensive cookware. I just wish the two smaller frying pans came with lids. That would be the icing on the cake.

Although I found Calphalon marketed locally below the Amazon price, it was Chinese made and from my understanding inferior in wear and utility. Amazon had by far the best price for the product I wanted. It arrived in just a few days at my door and I gave it as Christmas gift. I always compare Amazon in both product and price. Rarely I can beat Amazon on either.

I got this 10 piece set for my wedding 3 years ago, and have used them nearly every night since.



PROS: They are extremely durable, I've never had problems with warping even when going from hot to cold temperatures, which I now know you shouldn't do.

They do go in the oven which is nice when making one-pan dishes.

They are really easy to clean, just soak for a few minutes and wash with a green scrubby pad.

They are partially non-stick. This could be a pro or con. When using the pans at higher temperatures food tends to stick, but I feel this is balanced out with how easy they clean. They definitely stick less than my other aluminum pan, and are a lot easier to clean.

They seem to distribute the heat evenly through the pan/pot, and maintain their temperature well. When I set the stove temperature, the pans will heat up to a certain point. They don't seem to get too hot and don't require constant stove adjustments to maintain a temperature.



CONS: The handles do get a bit warm when cooking on the stove, the ends are never too hot to touch but you can't grab the handle too close to the pan/pot. The lid's also get hot and require potholders.

The pans don't brown. Well, they do brown, but when they brown, all the brown sticks to the pan. I have a cheap aluminum pan that I use for things like hashbrowns and other things that I need a good browning on.



Overall, if I could go back and register for a different set of pans, I would not. I wanted a set of pans that would last me 30+ years and still look good and function well. After 3 years these pans still clean up to the same condition I purchased them. They are really great for the everyday family cook such as myself. I'm not a professional, so I'm sure there are better pans out there, but these suit me just great.

I was so excited to get the 10-piece set. Then, to much major disappointment, everything sticks to the frying pans! And DO NOT blame the cook. I'm so tired of other reviewers and Calphalon blaming the customer. That's an old marketing ploy to make customers feel inadequate, and I'm not buying it.



Yes, I freaking know this is not nonstick, so shut up. Yes, I have followed the directions to a tea each and every time I've used the pans: Heat the pan up to the necessary cooking temperature. Don't try to make it heat up faster, just wait. Then, and only then, put oil or butter in the pan. Then cook.



One poster said to never used aerosol cooking sprays. Well, Calphalon should be the one to say that if it's the case. According to their directions, cooking spray is okay as long as you spray the food prior to placing it on the pan and do not spray the pan directly.



I know how to cook. I know how to read. I know how to follow directions and I have.



I thought perhaps I didn't have enough oil (which is bad since I'm already trying to control my fat intake). So, I put more oil in the pan this morning for my eggs (cause I don't personally like stuck-on-pan eggs ... and just forget omelets). IT STILL STUCK! I have NEVER owned a pan of any kind that stuck with that much oil. This is crazy. What is making it stick? There's something wrong here.



It was highly recommended by the guy at Bed, Bath, and Beyond, but I have a feeling he would have highly recommended anything we asked him about just to get us out of his hair or to get us to buy something.



So, I guess I'll take the set back and exchange it for the Unison. This is disappointing because the Unison set doesn't even come with a 12" pan, which I need and it already cost $100 more.



OR, perhaps, I won't get Calphalon. All of my bakeware is Analon and the quality is so amazing.

This set is perfect for any family that spends a lot of time in the kicthen and is definitly worth the investment. All the pieces are sturdy, cook evenly, and yes while they are technically not non-stick, all of our food, including eggs, have cooked perfectly. I read some of the other reviews concerned about damaged pans becuase of poor packaging. However, I talked to a Calphalon rep and they said that that problem had been resolved. Sure enough, our pans came wrapped safely in plastic and seperated by cardboard. No nicks or dents. You do need to follow recommended directions for cooking (i.e., heat up pans before adding oil) and keep your pans clean for optimal cooking. But, if you are a cooking enthusiast, there really is nothing like have a quality set of cookware without the worry of teflon flakes in your food. And with the lifetime warrenty and responsive customer service to top it off, this set has been wonderful.

i regreted buying this product after a few weeks of using them. dont be fooled by the caphalon name. the soft grip handles on these pots "slide out" when the pans heat up as this can be very dangerous especially if your transferring a pan from one burner to another. also you have to cook your food on low heat or your food will stick. i definitely do not recommemd.

After a mere 16 months I have to replace this cookware set because all of the nonstick coating from the bottom of the pans has apparently been an unwelcome addition to the family dinner. I will not make the mistake of paying BIG money for an overpriced, poor quality cookware set again. I've done my homework this time around and won't leave my choice up to thinking because I paid more that that would in any way reflect quality. I will never again buy nonstick. It will be stainless steel for me and it will NOT be Calphalon.

Pots and pans is more of a personal choice... but I found these work great. I have used them for a few months now and they still look brand new. I have a gas stove top and you can't see any burn marks, etc.



Non-stick works perfect - easy clean up every time. I like the added bonus of the grips on the handles as you can hold them and feel virtually no heat while they are on the stove.



Heat distribution seems to be fine.



I only wash them by hand, I have not tried to put them in the dishwasher as I am afraid it will damage them, besides, clean up is so easy, you can be done with it in no time.

I purchased a 10 pc. Claphalon Contemporary cookware set about 6 months ago. I really have come to like my new cookware. Previously I had used a hand-me-down Revere set, and wanted a heavier-bottomed, purchased-new-by-me set. I did a fair amount of research, and based mostly on Consumer Reports' evaluations I chose Calphalon. I specifically chose the Contemporary line because of the glass see-though lids, the lovely design, and the lower weight of individual pieces compared to other Calphalon product lines. At first I didn't like how large and heavy the pots and pans were compared to my Revereware. I'm used to the extra heft now-- the extra long handles on the Calphalon help with balancing the weight of pot and contents. I also didn't like the fact that the Calphalon handles were so long that I had to completely rearrange my cabinets to provide a place for the new set. To aid in storing, I found online a do-it-yourself rack (made from an inexpensive metal hand towel rack) for the lids that I attached to a cabinet door. This rack is very handy, and allows me to stack the pots to conserve space.



Some reviews I've read complain about food sticking to stainless steel. I've not had this problem AT ALL PROVIDED I use the cookware according to manufacturer's directions. That is, heat the cookware first, then add the oil/fat. Only add the food after the oil is hot. Never use high heat except to boil water. (I find I never feel I need high heat with the heat-distributing properties of this cookware.) Slight discoloration on the interior of the pots that I get sometimes after cooking is very quickly polished away with Bar Keeper's Friend.



The lovely shape of the Contemporary line adds a serendipidous advantage: the gradual curve of the bottom of the pots (curved like a saute pan) allow me to use a spatula more quickly and efficiently to stir and scrape out food. I really like this feature! Did Calphalon do it on purpose?!



I like the see-through lids. Eventhough the lids bead up with condensation, which limits how well you can see the food in the pot, I find I can readily monitor reaching the boiling point or the rate of boiling anyway.



The set requires sharing a lid between the 8" saute pan and the 2 1/2 qt saucepan. Often I want to use both of these with lids simultaneously. Purchasing another lid would put me back about $40! So I sometimes just use the stockpot lid, which overhangs the edge of the saute pan.

I have had this set for over two years and I love it! And I have to say, in response to the other reviews, I don't buy Barkeeper's Friend (or anything similar), but I have no problem cleaning these pans - EVEN FOR EGGS. As long as you preheat correctly there is little sticking or cleanup, and a little soaking takes care of the times when the preheating wasn't done correctly (like, by my husband!). Just remember: "hot pan, cold oil, food won't stick!"



These pans heat quickly and wonderfully evenly every time - I never have to turn my burner above medium. Not to mention, they are beautiful and ergonomically easy to handle. I have carpal tunnel syndrome but the construction of the handle and the way it joins to the pan makes it easy to lift and carry. Also, the way the handle joins to the pan (with a Y construction) ensures that it is a very solid join but conducts little heat, so the handle remains cool.



Yes, the handle on top of the lid gets hot since it is directly over the heat, but that seems kind of obvious; just use a hot pad to lift the lid. Also, I have had none of the discoloration problems mentioned here; I'm not sure what might cause that, but whatever it is I apparently don't do it. I have also had NO problems with the pans denting and I do sometimes use metal spoons, though I prefer wooden.



No, they don't look brand new any more, but really, who cares? They are extremely well-constructed and in two years of hard use (family of six) none of the joins or screws have loosened even a smidge, and no glass lids have broken. Plus, they are by far the most attractive pots and pans I've even seen, with lovely elegant lines. I like having them in my kitchen to look at as well as to use.

I bought the Calphalon Contemporary Stainless cookware 13 pieces set three months ago and wanted to give my thoughts. First of all I am a beginner cook and have only done simple things with the pans.



I did my homework; I read various web sites on stainless cookware and how to care for it. I read all of the instructions that came with the pans. I checked out Calphalons web page as well.



I have had no issues with sticking, none. First I warm up the pan slowly, and then I put a light layer of heart friendly oil in the pan.



Clean up is a breeze, the trick BAR KEEPERS FRIEND.



The pans still look as good as new. Use plastic and wood utensils with the pans, no metal. Mine came with a set of utensils, which I use every time.



One reviewer damaged the pans by hitting a ladle against the rim, I have been careful not to "BANG" the ladle against the rim.



And yes, the lid handles do get hot.



Nothing negative to say, buy these. Did I mention BAR KEEPERS FRIEND?

I would rate this 4.6; reasons to follow:



To start off, I spent around 5 months of looking into cookware before I made a decision on these. Some of the "Honorable mentions" would be All Clad, Emeril Ware, Simply Calphalon, Calphalon One, Calphalon NonStick, and the Calphalon Anodized. After much debate, handling, and "weighing of pros and cons", I settled on this set.



The BreakDown:

I LOVE this set and would definitely purchase these lil' gems again. I plan on getting married soon and I'm the more of the cook in the relationship; hence, I was looking for something long-term and that both of us would feel comfortable using.



THE SELLING POINTS:



Stylish, brushed stainless steel coating. Looks good now, should still be in style later on. Traditional look with a contemporary style.



See-through lids (although it fogs up and you can't see anything anyway, it's a splashy idea nonetheless)



Smooth handle with "Y" connected handle - This is GREAT since the heat transfer area is slight and really keeps the handle safe to the touch. The other thing with the handle is that it's easy to hold even with the heavier pan (3-quart sauté pan). When I checked out All Clad's cookware, their handles hurt my hand. Theirs is in the shape of a sharp edged trough - I could barely hold the thing without pain; and this was before food was in it.



Weight: These don't really weigh all that much compared to some of the other brands. By no means is it lightweight; but it provides a "solid" feel to it. My Fiance, who has small hands (ring size 3) doesn't have a problem handling these. She used All Clad and hated the handle design and the weight of them.



Even Heating: it's been mentioned before, but these really do heat up evenly. Some (Emerilware) have this little copper/metal base on the bottom of the pan. Pretty much only the food above the base gets cooked and the outsides don't. I've never had a problem with uneven cooking, even with a largely stuffed pan. Don't misunderstand this, you still do have to rotate food while cooking; but this isn't a serious concern.



Non-stick: Although this set is NOT non-stick. It sure has some of it's properties. I can make a fried egg with no problem and saute stuff with no sticking. IF food does start to stick, see Tip 1 below.







THE BLAHHH:



Heating: It IS true...these will heat up quickly. DO NOT put these past HIGH! Even Med-High is pushing it. In my experience, I can saute onions, peppers, chicken ect at low-med heat with no problem. I can not tell you how many times I've burned olive oil in these things; and it's a $***& to get off. If you do happen to burn stuff in these, get BarKeeper's Friend. It takes off most of what you had on there.



Tip 1: I found out that after cooking a particularly "dirty" dish (or if food starts to stick to it), I'd have to use BK Friend to get it back to where food (eggs in particular wouldn't stick to it).





Edges: You'll notice that there's an edge for where the lid fits comfortably in place. The problem here is that if you burn something in the pan, you'll need a knife/razor blade to scrape this stuff off. Even BKF won't get off some of this stuff if you burn it on good enough. I like the edges, but the fact that there's no way to really clean this is a con.



Scratching: Ok, here's the deal with this. Calphalon DOES say that you CAN use metal utensils with this set. Using metal utensils doesn't hurt the cookware; but it WILL scratch them. I use wood or plastic with these and have had great luck with it. In the case that I do need to scrape stuff off the bottom. I have no problem with using metal. If I'm somewhat careful, I might inflict a minute scratch.



Washing: This really isn't a Con per se, but it can be a turn-off to some people. You WILL have to hand wash these and DRY them when you're done cooking. No air-drying here. It'll leave water marks and food will stick.



Tip 2: always use hot soapy water when washing this stuff and never put cold water in these when they're hot in order to get the "bits" off. You'll ruin it and void the warranty.





Conclusion:

From talking to other people, this set seems to be a bit more finicky about it's care and use than some of the other brands. For me, this has been a "Smooth" set to work with and it seems to be a great tool. Something that I'll be using for a rather long time. It is one of the more expensive of Calphalon's line, and you can't always find this line. Get the stuff early, and get all the matching stuff that you'd want - it might not be here forever.

I received the 8-piece set of Calphalon One pots and pans as a wedding gift three years ago. I am an experienced cook and I was hoping to replace my older cookware with this set. Unfortunately, I now have to replace my Calphalon pans. After only three years nearly every pan is losing the nonstick coating! I never use metal utensils and I have never put these pans in the dishwasher. I am very disappointed with these pans. They are also very heavy and somewhat difficult to maneuver. :-(

I bought these because I was remodeling my kitchen going to a flat cooktop and needed new pots. I had caphalon before and they were good but old and slightly warped. They sounded good in reviews and looked good. Nonstick worked well initailly. My wife wanted non stick and light pans. These fit the bill.



BUT after less than two years now I am shopping for new pots. The ones I use a lot do not lie flat anymore leading to uneven heating, and rattling when cooking and the non stick is scratched in every pan. I dropped my large soup pot on tile floor (empty, no food adding weight) and it warped enopugh I could no longer get lid on. I gave it away.



For the price these are not a good deal. My daughter is thrilled because I will give her these and she has a gas stove.

I bought these pans about a year ago. I was so pleased. I also bought an expensive set of wood utensils and threw my metal ones out. All and all I'd say I spent $700+. At first they were great. Hand washed, wood utensils and never in the oven. My first mistake was trying to cook a pot roast with bone in my Dutch Oven. Big scratch!!! No pan should be so fragile. By the end of the year every pan is scratched and I don't mean one little scratch in the bottom. These pans look worse than my Costco brand after 5 years of wear which they replaced @$150. When I get the guts to tell my husband what garbage they are, I'm going back to Costco.

Sigh... What wonderful pots. They conduct heat fantastically, look smashing, and are just a joy to use.



Cleaning-

Initially, after cooking a few meals I became quite distraught at the staining and phantom residue that the pans were retaining. Scrubbing with a scouring pad didn't work and soaking proved fruitless. Inside of two weeks the pots looked "used."



With nowhere else to turn, I decided to purchase the product Calphalon RECOMMENDS for cleaning their pots, Bar Keepers Friend® Cleanser & Polish: 12 OZ.



Look it up on the 'net. This stuff WORKS. After using Bar Keepers Friend® Cleanser & Polish: 12 OZ my pots look BRAND NEW again. Don't forget to pick some up at the grocery store after you buy these pots. You won't be sorry.

I'm on a crusade against Teflon (as much as one can be lol) and love the look and the durability of stainless steel cookware. However, for some inexplicable reason, most stainless steel cookware has handles that are also stainless steel, so the handles heat up along with the pan. Seeing how this is a huge inconvenience for anyone who actually wants to use stainless steel pans, when I saw this set, with silicone rubber around the handles, I knew I needed them. (Also, I'd been using my grandmother's Farberware pots and the handles started becoming loose, and they DON'T make Farberware like they used to lol.) $199 is a lot, granted, but you get a lot in this set, and the glass covers and the cookware is of extremely high quality. The pots and pants heat up quick and evenly, and they're heavy, extremely durable, and dishwasher safe. Calphalon for the win.

I got this 10 piece set for my wedding 3 years ago, and have used them nearly every night since.



PROS: They are extremely durable, I've never had problems with warping even when going from hot to cold temperatures, which I now know you shouldn't do.

They do go in the oven which is nice when making one-pan dishes.

They are really easy to clean, just soak for a few minutes and wash with a green scrubby pad.

They are partially non-stick. This could be a pro or con. When using the pans at higher temperatures food tends to stick, but I feel this is balanced out with how easy they clean. They definitely stick less than my other aluminum pan, and are a lot easier to clean.

They seem to distribute the heat evenly through the pan/pot, and maintain their temperature well. When I set the stove temperature, the pans will heat up to a certain point. They don't seem to get too hot and don't require constant stove adjustments to maintain a temperature.



CONS: The handles do get a bit warm when cooking on the stove, the ends are never too hot to touch but you can't grab the handle too close to the pan/pot. The lid's also get hot and require potholders.

The pans don't brown. Well, they do brown, but when they brown, all the brown sticks to the pan. I have a cheap aluminum pan that I use for things like hashbrowns and other things that I need a good browning on.



Overall, if I could go back and register for a different set of pans, I would not. I wanted a set of pans that would last me 30+ years and still look good and function well. After 3 years these pans still clean up to the same condition I purchased them. They are really great for the everyday family cook such as myself. I'm not a professional, so I'm sure there are better pans out there, but these suit me just great.

 "I can't cook anything with this!" 2009-12-22

I was so excited to get the 10-piece set. Then, to much major disappointment, everything sticks to the frying pans! And DO NOT blame the cook. I'm so tired of other reviewers and Calphalon blaming the customer. That's an old marketing ploy to make customers feel inadequate, and I'm not buying it.



Yes, I freaking know this is not nonstick, so shut up. Yes, I have followed the directions to a tea each and every time I've used the pans: Heat the pan up to the necessary cooking temperature. Don't try to make it heat up faster, just wait. Then, and only then, put oil or butter in the pan. Then cook.



One poster said to never used aerosol cooking sprays. Well, Calphalon should be the one to say that if it's the case. According to their directions, cooking spray is okay as long as you spray the food prior to placing it on the pan and do not spray the pan directly.



I know how to cook. I know how to read. I know how to follow directions and I have.



I thought perhaps I didn't have enough oil (which is bad since I'm already trying to control my fat intake). So, I put more oil in the pan this morning for my eggs (cause I don't personally like stuck-on-pan eggs ... and just forget omelets). IT STILL STUCK! I have NEVER owned a pan of any kind that stuck with that much oil. This is crazy. What is making it stick? There's something wrong here.



It was highly recommended by the guy at Bed, Bath, and Beyond, but I have a feeling he would have highly recommended anything we asked him about just to get us out of his hair or to get us to buy something.



So, I guess I'll take the set back and exchange it for the Unison. This is disappointing because the Unison set doesn't even come with a 12" pan, which I need and it already cost $100 more.



OR, perhaps, I won't get Calphalon. All of my bakeware is Analon and the quality is so amazing.

This set is perfect for any family that spends a lot of time in the kicthen and is definitly worth the investment. All the pieces are sturdy, cook evenly, and yes while they are technically not non-stick, all of our food, including eggs, have cooked perfectly. I read some of the other reviews concerned about damaged pans becuase of poor packaging. However, I talked to a Calphalon rep and they said that that problem had been resolved. Sure enough, our pans came wrapped safely in plastic and seperated by cardboard. No nicks or dents. You do need to follow recommended directions for cooking (i.e., heat up pans before adding oil) and keep your pans clean for optimal cooking. But, if you are a cooking enthusiast, there really is nothing like have a quality set of cookware without the worry of teflon flakes in your food. And with the lifetime warrenty and responsive customer service to top it off, this set has been wonderful.

I am chef trained at the Culinary Institute of America. When I got married over a year ago I put these pans on my registry excited to finally have a really good set of pans like my parents. I was looking for the perfect pan that combines restaurant quality with home ease. Overall, they have been a big dissapointment. The 12 fry pan lost the flat bottom after it's first use. Food does stick to the bottom of the pans. I have learned if you leave the food, like a piece of chicken, in the pan till it's almost burn point, then, and only then, does it become "non stick." I will use these pans for a few years and then trade in to Calphalon under the warranty to something different.
