First off I ran across Calphalon brand knifes by chance.Just happens Im in a store and I need 6in utility knife.I look over several knives,choose calphalon 6in. contemporary.Knife looked ok,price more than anything made it my choice.I had never heard of this brand before.After using this knife I noticed the qaulity was very very good.I liked it so much,I decided to buy the whole contemporary set.These knifes are better than knifes I paid 3x more for.After using the contemporary set for a couple months I purchased the complete LX series,and I love them.Excellent product,fantastic price.

"Bad quality and worse customer service" 2010-09-23

Think long and hard before buying these! You'll have to count on your luck that they will be stainless at all and if not that you'll get you money back.

I bought a 14-piece set less than 2 months ago. I followed all the instructions - handwashed, dried and stored appropriately. Still, after very light use and in less than two months all the knives I ever used are covered in rust stains - unsightly and unsafe.

Contacted customer support and they said well, sometimes they do stain! No apology in sight(view full quote below) and that I should pay more money for a special cleaning product to try to fix it. Failing that, more money from MY pocket to send the knives in and, provided I passed THEIR inspection, they might consider a return after 3 weeks. I wonder if the knives are so thoroughly inspected BEFORE they put on sale!

I have never paid this much money on such low quality product and customer service. I had 5 dollar sets last longer.

Never buying from Calphalon again and I would NOT recommend it to anyone.

Perhaps I had bad luck but consider what you may be in for before making a purchase.

"Heavy and well balanced" 2010-08-29

I have had this set of knives for 3 years now and they have performed quite well. I was cutting up many big watermelons this past summer with the chef's nice and it performed like a champ. I bought these Caphalons for the way they felt and plus they have a nice look in the kitchen (each knife is also labeled at the base, which is handy). I like heavier knives and these are indeed that. The blades are thick and very sturdy. They do need to be sharpened somewhat regularly though, perhaps every tenth use, but that is the nature of knives (if it seems that you are using too much force to be cutting food, then the blade probably needs sharpening). I have no doubt these will last many more years. I also never put them in the dishwasher and have had no issues with rusting. You are not supposed to put any cutlery in the dishwasher from what I know (they all tend to rust). It is overkill anyway as hand washing only takes a few seconds. Calphalon did a nice job on this set.

Received the set as a present, probably a good idea to wash anything from the store before use... I did, and now the handles are ruined. Hopefully I can return them and exchange for same or similar set. DO NOT WASH IN DASHWASHER, as another review said, hot dry and hard water are an awful combo. There is no warning of this on the box, and no warning of the fight you'll have with your wife after you're thoughtfulness and consideration to wash the knives turns to a nightmare...

The knifes feel great for balance, handle weight = blade weight so they handle freely. We'll probably return them and repurchase the same set, so that says a lot. Steak knifes look like they'll be a pain to clean and will probably shred your sponge. Sorry this is so scatter brained, that's me, enjoy the knives!

Hi, At first this set seemed better than competition.

Unfortunately I was first disappointed to note that not the entire set was made of "German Steel", the steaks knife are made of "Asian Steel".

Second disappointment, after 1 week, both a steak knife and the bone parer knife showed a stain of rust.

So I returned this and will try to find something like the old knifes I have for over 30 years and never showed a rust stain. I will try to stay away from "Made in China German Steel". Need to read the fine print.

It seems like we have bought new knives every few years for one reason or another, but two years ago, I decided I was going to buy a nice set for my wife for Christmas. I wanted the "lifetime purchase" this time. We don't do a lot of cooking, the knives are mostly for the steaks and bread. At the store, I really liked these knives... they are simple yet a touch of elegance. They have a very nice heft to them, and they are balanced very well, and they fit the hand well. The scissors get used for all kinds of things, and they are nice; the bread knive is good. The larger butcher style knives are simply dull, and feel more dangerous than confidence inspiring. But all that is fine for us... its just the steak knives that really give me pause, but that is by far what we use the most. The problem is that the serrated design is very fine, and from the very first cut, the teeth "load up". By this I mean that the steak ends up filling all the gaps in the serrations and when the knife comes out you can barely tell it is a serrated knife anymore. You can keep cutting, and they will work, but the effort goes up and the mess of meat that is stuck to the knife after every cut is frustrating. There's nothing you can really do about it, just keep cutting and put it in the dishwasher, or use a napkin to carefully pull the remnants out. I've never had a knife do this before... I've had duller knives for sure, but its almost like I'd rather have a clean knife that is less sharp than a sharp one that loads up and acts dull.

Semi-related, I bought the full Calphalon pots and pans set at the same time for all the same in-store feelings. Now, after a couple of years use, the frying pans have been passed to the trash can... the non-stick coating just started peeling / flaking off, and the thought of that in the food is horrible (read up on it... not good to eat teflon). Its like they got so close on both products, but has left me assured I won't buy either again.

I own this in it 4 piece set incarnation (which is the fork, knife, knife rest, and box) Calphalon Contemporary Cutlery 4-Piece Carving Set which appears to be out of stock, which is a good thing. The wood of the box is fine, but the liner is trashy plastic which will not let go of the knives, so do not wait for that version to come back in stock.

As for this version, although the knife seemed sharp enough, it did not do a good job cutting through flank steak and pork roast. Once the knife had pierced the surface, it did well enough, but still was more work than expected. Several of my kitchen knives, both cheaper and more expensive (victorinox and shun) did a better job at carving than this carving dedicated knife. It may have to do with the rather wide angle of the knife compare to asian style blades and even some other german knives, as I feel this knife may be too strong for its own good. I replaced it with a much more expensive but much, much better Shun set.

If you're reading this review, either you cook alot or are buying for someone who does.

I started with the Calphalon Santoku which is an excellent knife but more suited for certain styles of slicing/cutting (think widely applicable for prepping Asian cuisine whereas the Chef knife is in line with American/European) leading me to this knife. Steel is fairly good quality and holds its edge well. It is well-balanced for high speed chopping with a full-tang in the handle. The grip on the handle is ergonomic for slicing/chopping, however it may not have enough "grip" on the surface if you want more heavy duty chopping (in which case you should be using a different knife).

Overall, the Calphalon is a quality, no-frills chef knife that I have found to be the most versatile piece of cutlery in my kitchen set.

You could not get a better chef's knife for the price. Inbelievable. I have had mine for 6 years and never had to have it sharpened professionally. I keep it very sharp with a steel.

I would never buy any other knife now. I use to only buy Henkels. I must have had at least 6 of these through the years at about $100 bucks per knife. The Calphalon is way easier to keep sharp....and I like the weight better too.

I've had a set of Chicago Cutlery steak knives for years, and while I was okay with them, I was also ready for something new. Something more modern looking. Something without a wooden handle.

I didn't want to spend hundreds of dollars on a set of steak knives, but I did want a decent quality set. I started looking at all-metal sets, but the handles often looked too thin to hold comfortably. Then I found the Katana series. The shape was appealing. The price was on the high end for me, but not exorbitant. The smooth blade with the serrated tip intrigued me. (I know knife purists are gasping, but I just don't care - I want a decent knife that works not an heirloom.)

And the verdict after using them for a while? I like them quite a bit. They look great. They're sharp. The handle is a very comfortable shape - more rounded than I thought it would be from the picture. The polyresin gives a good grip even with wet hands. They seem to hold their edge well enough.

I know that good knives and dishwashers don't mix for a variety of reasons, but my one pie-in-the-sky wish is that I could throw them in the dishwasher (not at all recommended and will void the warranty). However, they do at least dry off better than wood-handled knives. I would consider buying other knives in this line.

This is a nice set of steak knives, the only little problem was that the box came damaged. Other then that everything else was great, the knives themselves came undamaged. Normally I wouldn't have paid that much attention to the box being damaged as long as the item or items are not damaged, but seeing how these Calphalon Katana set were purchased as gift, I would have been more than happy to give a five star rating. This is time I was lucky to receive undamaged items (in this case knives), but next time how knows, because damaged boxes usually mean that the product inside might be damaged. Overall a five star rating for the knives themselves, great set I would say.

I only have one minor complaint -- they come in sets of 4. Four is not quite enough for entertaining at our house, and eight are too many. Still I highly recommend these knives!

I was a bit hesitant about buying these knives as I'd read from another site a person had problems with the knives rusting quickly (they noted it happened within an hour, not that they'd left the knives in the sink overnight). However, I have a contemporary styled set of Wusthof Grand Prix II knives and need non-traditional steak knives to match. One thing that allayed these fears was Amazon's return policy. Another thing was Calphalon's lifetime warranty. Thankfully, I have had to use neither.

The black you see on the handles is a polyresin that is actually quite comfortable. It imparts some warmth to the design and offers grip not seen in items like the Wüsthof 8-Piece Stainless-Steel Steak Knife Set with Wooden Gift Box. This also gives the handle some size and makes it less dainty -- enough that you would feel secure bearing down with the blade. The blade is also very hard and cuts through even tough meats like warm butter. I have not had to use the saw tip yet. Were it not for the light weight of the knives, I may have bought the kitchen knives as well for their style.

If you like light knives you will appreciate this set as well. The tang goes all the way through the handle but I would put the balance point more near the center. My only quibble with Calphalon (and the reason for only 4 stars) is why only 4 knives? I've noticed this with other manufacturers as well. 4 knives seems like too few while 8 knives seems like too many. I'm single so 4 knives suits my needs plenty, but occasionally will have 3-5 people over for dinner. Do I try not to serve anything that requires a serious knife? Cajole guests into sharing? Pop for the extra 4 and leave 6 or 7 knives languishing for the majority of the time? Help a guy out!

pros: good steel. thin blades, epoxy resin handles, balanced, stay sharp, they bend instead of breaking. they look good, they should last forever

cons: due to the type of steel that these are made of, they aren't rust proof, u must dry them after use. They are so sharp u must be extremely careful not to cut ur fingers off

I strop my knives with polishing compound, and if u do this too, you could split atoms with these knives; they stay razor sharp with stropping.

Disclaimer: I did not buy the actual set for sale, as I didn't want the block, but I purchased almost the entire set individually.

I am a professional chef, and I have to say that these are some of the most comfortable knives I have ever worked with. Comfort and balance are of utmost importance to professionals, and these knives deliver. I personally like the heft as well, and the perfect balance makes using the knife almost effortless. I purchased these as my professional set when I first started in kitchens, and they lasted me perfectly through the first few years. I have since started to invest in serious Japanese knives for my more precise tasks, but these are great all-around knives.

The only cons to these knives (from a professional standpoint) are as follows:

- The blades are very thick, making it difficult to slice certain ingredients neatly. They are particularly poor for cutting hard cheese unless you want it crumbled.

- Because of the blade shape (which is like a wedge), these knives struggle in fine-detail work. Mini brunoise is very difficult and slower than with some thinner knives, for example.

- The serration on the bread knife is EXTREMELY severe, and I have found it best suited to very hard, crusty breads, and entirely useless for soft loaves.

- Contrary to some other reviews, the shears do come apart. They take a small wrench to do this, and they loosen/tighten quite easily -- perhaps too easily, as they often get loose with regular usage.

I definitely recommend these to home cooks looking for a set of solid knives, but not so much for professional cooks, unless these cons are outweighed by the reasonable price tag.

got the 13 piece set from bed bath and beyond, turns out to be a really nice knife set cuts awesome especially after sharpening. can't imagine anyone complaining about a set for the cost. Best bang for the buck I ended up getting every single knife in this set. I'm not by all means a master chef but when it comes to getting the best for your money after 3 different knife sets I came to a conclusion as seeing these as the best for the money. Don't really need all the knives in the katana line up but when I saw the knives performance first hand I jumped online and bought every one! Don't be misled by any cons about these knives, you can't get more for the money!

I experimented with all of the Henckels Four Star 2's and Wusthofs for quite a while but neither fit my hand as well and neither had the balance I prefer. These knives look amazing so the average home kitchen chef will look like a pro but the design helps you to cut like one as well. Calphalon isn't known for their top tier knives but these can compete with the best, especially for the money. Don't be turned away just becasue of their name or because they will spot if you mistreat them. Wash them each time, maybe run them down the steel and wipe them dry before you put them away like any $300+ set of knives should be treated and you'll have years worth of enjoyment out of these heavier than average blades.

Found these on line and purchased for my wife who runs a home based daycare and cooks for 12-14 kids daily. She has never had the privilege of using nice cutlery and would probably not spend the money on something like this for herself. She frowned at me when she found out what they cost and wanted me to return them. I insisted that she give them a try and was just as pleasantly surprised as she was. The handles are very comfortable and allow for a variety of holding positions. The Damascus style blade is beautiful. The only word of caution I can offer is that you wash and dry the blades immediately as the blades will stain if not attended to promptly. We have been using these for almost a year now and are just as pleased with their performance today as we were the first day.

"They Rust in the Dishwasher" 2009-10-26

I looked long and hard for a good set of reasonably priced knives and settled on this set. Although I love the weight and the professional quality of the set I am very disappointed with the way they rust if washed in the dishwasher - especially if you have a very hot dry cycle. Because family members sometimes forget to wash them by hand I have to clean them with CLR to get the rust stains off. Be aware that if you have hard water the handles will whiten over time unless washed by hand. As previously stated they do have to be sharpened frequently but it takes only a few seconds and the sharpener comes with the set.
