These are great pans for the price, but then again I am partial to the hard-anodized type surface finish, as opposed to non-stick or polished stainless. The heat control is excellent when used with a gas burner. If you have a pot of water on to boil, and you turn the heat from high to low, the pan cools down very quickly. Same goes for heating them up. I believe this kind of cookware finish is misunderstood by many home cooks, since it does take a little know-how to get the results you want. For example, cooking meat in this type of pan requires an even, thin coating of fat like butter or oil and you MUST add cold oil to the dry, hot pan just before adding the meat otherwise it will stick like crazy. Hot pan, cold oil, food won't stick is an old chef trick and this goes for anything high in protein including eggs. Keep in mind that this sort of finish is used quite a bit in professional kitchens including a few I have worked in.



Also, don't ever put these in the dishwasher as the detergent will strip and discolor the finish. The only reason for the 4-star rating on this particular set is because I feel a separate lid should be included for the medium skillet -- none of the lids really fit it very well.

I purchased this set in December for a gift. It was at a bargain price, but has turned out not to be a bargain. After only six months of use (the reputation of this maker is that it is of lasting quality), the pans are sticking to everything...and the recipient cannot figure out why.The Amazon replacement warranty has expired, and the manufacturer has thus far refused its return.

My advise: buy a triple clad stainless set like the Chef Emerol sells ( i have his stuff and it is wonderful).

Not dishwasher safe - my husband made the mistake of putting one of the lids in the dishwasher. Their biggest flaw are the handles. They are very skinny which makes it very difficult for handling! But for the price, definitely worth it. Other than those things it's a GREAT set!

I purchased my Calphalon piece at a low price and was extremely excited! So disappointing. Their stick resistant technology is a joke! Everything sticks to this pan - foods that don't stick to regular pans -- stick to this one. This was a huge disappointment -- please don't make the same mistake.

PS I had Circulon for years and had good luck.

Let me start by saying I'm a big fan of Calphalon Commercial Hard Anodized...or was. I've been using a set of these pans for 10 years or so. Recently an inlaw who will remain nameless 'bowed' the bottom of my heavily used 10" pan by running cold water in it while it was hot. I finally decided to replace it and started my search. I soon learned that Calphalon was not longer making Commercial Hard Annodized, but there seemed to be a lot of "old" stock still around. Not being able to find a single pan I decided to by this 9 piece set as I could use a couple of the other pieces I don't alredy have and Ebay the rest.



The box arrived today and my excitement soon turned to dissapointment when I read "made in china" on the side of the box. I checked the Amazon add quickly and yep, there is no mention of made in China. A little deceptive on their part. Keeping my fingers crossed I opened the box and pulled out the 10" pan to compare with my existing pan. Not even close. Most noticable was the handle. The new handle while looking the same from across the room was shorter, thinner and even twisted. The rivets were smaller and compressed just enough to hold. The body of the pan itself was not nearly as smooth as my older pan, almost has a machined look to it. You can clearly feel the ridges when dragging your fingernail across them.



I'm sure this is a perfectly serviceable set of cookware, but it's nowhere near the quality of my old made in the USA Calphalon and it's not worth what I paid for it. The pan went right back into the box and the box will be going straight back to Amazon.



Buyer beware.
