"Wide blade not the best for slicing, box cheap for 4 piece set." 2007-12-17

I own this in it 4 piece set incarnation (which is the fork, knife, knife rest, and box) Calphalon Contemporary Cutlery 4-Piece Carving Set which appears to be out of stock, which is a good thing. The wood of the box is fine, but the liner is trashy plastic which will not let go of the knives, so do not wait for that version to come back in stock.

As for this version, although the knife seemed sharp enough, it did not do a good job cutting through flank steak and pork roast. Once the knife had pierced the surface, it did well enough, but still was more work than expected. Several of my kitchen knives, both cheaper and more expensive (victorinox and shun) did a better job at carving than this carving dedicated knife. It may have to do with the rather wide angle of the knife compare to asian style blades and even some other german knives, as I feel this knife may be too strong for its own good. I replaced it with a much more expensive but much, much better Shun set.

You could not get a better chef's knife for the price. Inbelievable. I have had mine for 6 years and never had to have it sharpened professionally. I keep it very sharp with a steel.

I would never buy any other knife now. I use to only buy Henkels. I must have had at least 6 of these through the years at about $100 bucks per knife. The Calphalon is way easier to keep sharp....and I like the weight better too.

I bought 6 different knifes 5 brands that sell for under $200 a set, this one is in the middle, I like it a lot, weight is good, hefty, I like the lines, big hands are very comfy, it almost might be too big for small handed people. mine was dull, after sharpening it seems pretty good, with OK edge life with reasonable use. I steel it before use, its a solid performer that is not going to compete with high end knives, but would probably be a great first nice knife for anyone that is looking to get away from cheap sets. I give it four because it was pretty dull at time of purchase, but you never know how many times it got shipped before I bought it, so other results may vary.

I bought this knife at TJ Maxx.(Go figure!!). I love this knife. I ABSOLUTELY WILL NOT perform in a kitchen with dull knives. This knife is the BOMB!!! It cuts with very little effort from me. The blade is SHARP and stays sharp. Its precison is wonderful for a knife that doesn't cost over $100. I own a wonderful knife set but I truly use this knife for everything, from pot roast to strawberries. The ONLY ONLY reason why this knife did not get 5 stars is because of the rust spots. I was told about something I can use so I'll be taking care of that problem soon but other than that, I believe every kitchen should have one.

I've been getting into cooking and was in the market for something better than the super cheap lightweight knives I've used my whole life, and decided before shelling out triple digits for a high end Shun or something, to take it in baby steps and try a mid range knife like this and see how it goes from there.

This is a GREAT knife for me to use around the kitchen. It glides through raw meats and vegetables alike; cleanly and effortlessly. It's got a good heft and feels very solid and reliable but is also well balanced. I'm still very careful and methodical with slicing and chopping, but this knife (plus the 5" and 7" Calphalon Santoku set) have taken the chore and effort out of it and made it a real breeze. At this point, I don't forsee a need to upgrade to the high end; these knives seem VERY well made.

I bought this knife recently and was surprised by what I got for [...] bucks. It is aesthetically pleasing (the wood grain pattern of the steel makes it look like a much more expensive knife), solidly made, and really really sharp, like, you can shave with it. The handle flares wide at the butt-end and flattens on top to accommodate the heel of your palm. Love the design, way beyond satisfied with the quality.

I was pretty excited about getting this knife. I like the brand and I expected the best quality. It is good steel and well designed. It would be a very nice knife wxcept that the cutting edge is not straight. It is wavy which results in the edge not touching the cutting surface evenly. The knife must be drawn over the cutting surface to cut completly through the object being cut. Even though the knife is made in China, I expected better quality from Calphalon. When I registered this with the company I commented on this issue and received no response.

I found this knife while browsing on the Amazon site. I have yet to see any reference to a 5" Katana nakiri knife on the Calphalon site. This is maybe my sixth Katana knife, and I really love each of them. I have not had any of the rusting problems mentioned in several reviews. The knives out of the box are the sharpest I have seen. I really like the balance and the wide tapered bolster, which helps remind the user to grip these knives properly. I generally clean my knives fairly shortly after use, but it seems that is the best way to care for good cookware and cutlery. The size and balance of this smaller nakiri is excellent, and it is a great vegetable mini-cleaver. The nakiri lends itself to a slightly forward stroke when slicing and chopping, and it works fine. The price is way out of line on the low side compared with other Katana knives. I have been buying and using them on a piecemeal basis, and I really like each knife I have bought with the exception of the serrated slicing knife. For some reason, it seemed to shred delicate items rather than saw cleanly. I returned it. The first one I got was the 6" chef's knife, and it has been one of the best short chef knives I have ever used. It has maintained its very sharp edge for well over a year, and, again, not a hint of rust problems. Other than the serrated knife, I would recommend any of those I have bought and used, including the 8" chef knife, the 3.5" paring knife, the 9" bread knife, and the 5.5 inch honesuki.

I just bought them, and they're going back. They are heavy, but they make a "boinging" sound when you hold them by the edge (that sound that metal makes when it's too flexible for the job).

I'm going to try Vollrath next.

Not many people chose them, but if ATK / CI likes them, that's usually a good start.

I bought these as a replacement for a set , from another brand , that were awful , they did all the bad things that a prior reviewer spoke of buckling etc.

Prior to this , I had owned a professional collectors version of this set . After 5 years of heavy use and some abuse , it was time to replace them . I couldn't find the same set, they don't make them any more . I went with the lesser brand and was very disappointed.

This set works great , I made a batch of cookies tonight , they cooked evenly , the sheet was stable and clean up was a snap. My only bug-a-boo with this set is is has Calphalon in big raised letters on the cooking side of the sheet , right smack in the middle ... I don't like the thought of one of my cookies being labeled lol so I used one of my silicone baking mats on top of it.

I'm surprised to read the previous review, because I just had that experience with a different cookie sheet, one that got great reviews from most people. I've owned my Calphalon sheets for a few years now, and they are solid, heavy-duty sheets that have never warped in my oven (and I bake scones every week at 425o in a convection oven).

I like that the 17" length makes them big enough to hold a 15"-wide sheet of parchment paper without having to fold or trim it. The two unrimmed edges make it easy to prepare items on a sheet of parchment and then just slide the sheet underneath it. The one thing I don't like is that the nonstick coating is pretty slippery... if you turn your pans end-to-end midway through a bake, you have to be careful to keep the parchment and baked goods from slipping off the pan.

I'm still confused as to why my experience is so different from Brian's... but the Calphalon sheets get two thumbs up from me.
